How It Tastes
From the first sip, bright gardenia florals and a champagne-like sparkle lift the cup. Juicy pineapple and deep blackberry compote follow, leading into a smooth layer of dark chocolate. As it cools, a refined Shiraz-like structure emerges, gentle tannin, red-fruit depth, and a clean sugar-cane sweetness.
Black Diamond Natural Process
Only the highest-Brix cherries are selected. They ferment aerobically in thick layers for 7–9 days, then dry slowly for 20–30 days (sometimes up to 60). This precise method produces exceptional sweetness, clarity, and aromatic depth, a hallmark of the Las Lajas mill.
