A warming and full bodied flavour of wine and berries with a tart but light acidity and a long bittersweet finish.
The Patalillo Mill was founded in 1888 by the Castro family and had an important role in the development of the coffee industry in Costa Rica. With the help of the World Coffee Research group, this varietal – Starmaya – is the only F1 hybrid in the world propagated by seed, rather than through costly biotechnology and was conceived to be more disease resistant for the focus of the future of specialty coffee.
